Mike sells beef in boxes of 25 pounds and 50 pounds. We only process one or two calves at a time, so in order to keep inventory balanced, Mike packs each beef box with an assortment of cuts. Feel free to order additional items such as eggs, pork, beef steaks, and miscellaneous cuts or raw milk, mushrooms and sweet potatoes.
For free delivery to your home or office in the Austin, Houston, San Antonio triangle, we ask that you order a minimum dollar amount of $200.
We ship outside the triangle area or Mike may be able to meet you at an agreed upon location.

Choose Your Box
I. Standard Beef Box
(1.) The Standard Beef Box will contain approximately 1/4 hamburger (about 6 pounds on the 25 pound box and about 12 pounds on the 50 pound box). The hamburger comes in approximately one pound packages.
(2.) 1/4 of your box will contain steaks: T-bones, rib steaks, sirloin.
(3.) 1/4 of your box will contain roasts from the shoulder and/or rump and/or boneless round.
(4.) The last 1/4 comes from stew meat, Osso Buco, marrow bone, ribs and brisket. If you have a special request and we have it in stock, Mike will pack it for you.
Heart, liver, tongue, thymus and kidneys are usually in abundance.

II. Farmily Economy Beef Box
The Farmily Economy Beef Box is the same as the standard, but we leave out T-bones and rib steaks and put in more ground and/or stew and/or organs.

III. Three Species Variety Box
The Mixed Species Variety Box includes beef, pork, whole antibiotic-free chicken.

IV. Marrow Broth Bones are $10 per pound
Ask about canoes, femur bones sliced lengthwise for roasting
V. Fresh, Pastured Eggs are $7.00 per dozen
Eggs are sold by the dozen and there is no minimum when you order a box of meat.

Rump Roast
This is a nice example of the yellow fat which is characteristic of grass-fed beef due to the beta carotene in the grass.
All meat with bones is pre-wrapped in food safe plastic wrap before it goes through the vacuum wrapper to ensure that the bone does not puncture the seal.
Osso Buco Unwrapped, Osso Buco is sliced from femur bones. It means bone with hole in it.
